Make candies from bitter kaki

Hoshigaki is the art of turning bitter to sweet

Make sweets from bitter kaki

Kaki (persimmon in English) has got an official position in some of European languages.

The kaki you find usually on the market are sweet. But most of those you find on trees in Yonekawa are bitter. Local people make preserved sweets with these kaki, drying them in cold weather. Cold air makes them sweet, in fact. This is called hoshigaki (dried kaki).

A curtain made of kaki is a nostalgic memory for most of the elderly Japanese people living in cities.

Hoshigaki making is one of experiences that most Japanese long for.
